Food trends:
Chef Bob isn't a man to follow trends; he creates them. His culinary philosophy revolves around pushing boundaries and reimagining the familiar. He believes in crafting experiences that not only tantalize the taste buds but also challenge conventional notions of what a dish can be.“I love experimenting with vegetables as if they were steak. Picture rutabaga sous vide, cooked medium rare, and seared to a crisp perfection. Alternatively, slow-roasted portobellos, seasoned and sliced akin to an aged steak, or go for scored and slow-roast zucchini, giving it that prime rib flair.” - Chef Bob Spiegel

Drink Trends:
“This year, the focus is on fresh and healthy beverage choices, featuring herbal infusions, teas, kombucha, and a surge in low-alcohol or alcohol-free options. Sustainability is the key theme for 2024, with a growing interest in eco-friendly and socially responsible consumption.” - Vin Halen, Mixologist

Event Design Trends:
“Simplicity takes center stage as elaborate décor steps back. Clients are adopting a mindful approach in 2024 – the year of "less is more" in event aesthetics. This acknowledges that extravagant displays, like $100,000 worth of roses flown from South America, no longer align with the corporate and private emphasis on minimizing environmental impact. The spotlight is now on showcasing reused, recycled, and sustainable elements in the event and catering design.”

Service Trends:
“This year’s trends revolve around comfort and community. While traditional seated dinners maintain popularity for formal events, the spotlight is on interactive food stations and family-style service, creating memorable and unique moments with that desired sense of connection people yearn for. The relaxed and communal nature of these styles reduces formality and makes it easier for guests to connect with more natural opportunities for social interaction.”
