A Pinch Winter Peep Show

A Pinch Peep Show is exactly what it sounds like, and nothing like what you’d expect.

Once a year, we open the doors to our Chelsea studio and kitchen to debut what we’ve been recently obsessing over: new trays, new food furniture, new Pop-Up designs, and an entirely fresh lineup of passed bites, interactive dishes, and cocktails that haven’t yet hit a party floor.

Last week’s Peep Show was all about the Pop-Up: Pretzels and crullers suspended as window dressing. Fish Stix moonlighting as cigarettes. Plates on plates on plates (on trays). And on display? Eggs (of the chicken and fish variety), cooked exactly as they should be, because some things don’t need reinventing.

The Pinch staff wore bolo ties crafted from up-cycled materials used in the design collection, a nod to our zero-waste initiative.

Design + Menu:

  • Passed Hors d’Oeuvres: Faux gras tartine with butternut and grape gastrique. Ceviche verde with bay scallops and corn. BBQ chicken in a wonton tart with green olive gel, peas, and shiso.
  • The Suspension Interaction: Pretzels, hanging. Chicken liver and poblano-parm, your choice. Flipped for dessert: passionfruit crullers, still airborne.
  • The Onsen Interaction: A sous-vide egg, paired with shrimp and shiitake nasi goreng.
  • Chef’s Table with Chef Bob: Warm corn blini, loaded: crème fraîche, chives, caviar, trout roe, chive oil.
  • Got Mail: A croque monsieur shaped like an envelope. Addressed to you from us.
  • The Plate Palette: Carrot trio: roasted, crumbled, puréed. One vegetable, fully committed.
  • High + Low: A tuna melt, reconsidered. Crispy rye buñuelo, bluefin tuna salad, mimolette.
  • The Chrome Pop-Up: Our signature tira-miso. No notes.
  • The Fish Stix Floor Sample: Served from the Alessi ash tray. Fish stix as cigarettes. You knew what this was.
  • Lemon Meringue Oeufs: Lemon curd, shortbread, meringue, crispy fruit, chaat-spiced snackys.
