Sōsaku sushi (創作寿司) translates to “creative” or “inventive” sushi. It refers to modern, artistic sushi that breaks away from traditional rules.
For years, we’ve dreamed of bringing an authentic sushi experience into our events, one that respects the traditions of Japanese omakase while finding its place within a contemporary New York gathering. We're proud to finally announce our latest interactive experience: “Sōsaku sushi”.
Designed, developed, and handcrafted entirely in-house, our custom omakase counter was made using Hinoki wood (Japanese Cypress).
From the handcrafted fish box and solid Hinoki work surface, to the traditional samegawa for grating fresh wasabi, we created a culinary environment that is both functional for the chef and engaging for guests.
The experience is led by our Executive Sous Chef, Eunjin Lee. Before joining Pinch, Eunjin spent years training as a sushi chef at Nobu Tokyo, before moving to New York. Her Pinch experience and remarkable sushi craftsmanship allowed us to bring this long-held project to life.
We officially debuted the sōsaku sushi experience during our two summer peep shows. While the new interaction was the main event the menu was curated to complement:
